I got charged with 2nd degree assault, this was my very first time getting in trouble I spent 1 night in jail and I have 3 thousand dollars in restitution there was no proof of any hospital bills, or no documents showing that she missed work, Im a single mother and there is no way possible I can afford 50 a week for the next year, I work maybe 10 hours a week, making minim wadge, what should I do?

File a motion to reconsider your sentence and ask the judge to modify the conditions of probation. Or, file a motion for new trial, appeal, post-conviction motion, coram nobis or something similar.
